I can play the flute and the Irish tin whistle (also called a penny whistle). I wish I could play the piano, but it's so hard for me to read that type of music with two staffs. My mind can only focus on one staff at a time. I heard that people who play the flute can easily transition to saxophone. Does anyone know if that's true?

I play several instruments, however, one I haven't attempted is the banjo.  It sounds very fun and I like bluegrass, but I don't think it would be easy.

Bagpipes would be that for me. I have always been fascinated by the musical instrument but never got the opportunity to play it. Unfortunately, it's not very common in my country, otherwise I would have gotten the chance to give it a go.
